What Are Microgreens?

Microgreens are the young seedlings of vegetables and herbs, harvested just 7–21 days after germination — after the first true leaves appear, but well before the plant matures. They sit between a sprout and a baby green in size, and are prized for concentrating a large share of the mature plant's nutrition into a much smaller, more tender leaf.

Benefits of Microgreens

Research from the University of Maryland and USDA's Agricultural Research Service (2012, Journal of Agricultural and Food Chemistry) found that microgreens contain, on average, 4 to 40 times more nutrients — including vitamin C, vitamin E, vitamin K and beta-carotene — than their mature counterparts, gram for gram. Red cabbage microgreens, for example, showed roughly 6 times more vitamin C and 69 times more vitamin K than mature cabbage.

Cruciferous microgreens (broccoli, radish, cabbage) also carry substantially higher levels of glucosinolates — compounds linked to antioxidant activity — than their mature vegetables, and emerging 2025 research points to benefits for gut microbiome diversity and inflammation markers when these greens are eaten regularly.

Nutrition Information
